Guinness Cupcakes with Bailey’s Frosting

I have been waiting to make these cupcakes for several months now.  Being fiercely proud of my Irish heritage (and also a huge fan of Guinness), I knew that I had to make these for the international holiday of my people, St. Patrick’s Day!

My friend Ashley made these cupcakes a few years back, and the first thing I noticed was how unbelievably moist the beer makes the cupcake. Baking with beer is nothing new, but the combination of chocolate and smooth, malty Guinness is just amazing. I revisited the recipe on Smitten Kitchen and decided to give them a whirl.

The original (and many subsequent) recipe calls for a chocolate whiskey ganache, but since I was making these for coworkers, I figured I’d leave the Jameson for our happy hour. Even with just Guinness and Bailey’s, by the time these were devoured, my coworkers had dubbed them “boozecakes”. Next time, I’ll definitely fill these with ganache, and decide whether or not I want my recipients to be hammered.

Being a huge nerd, I decorated these things like crazy. And also listened to “The Wild Rover” on repeat.

I wonder what other treats I can make with beer and liquor?

Reindeer Cake Balls

Merry Christmas everyone!

I’d heard about cake balls from Bakerella’s blog a while ago, but always assumed they were just that: balls of cake. Big whoop, I thought. Then, my amazingly talented friend Jen made some cake balls.

I know I’ve said simply “wow” for a lot of things, but wow.

Possibly the most amazingly perfect things I’ve ever tasted. If there was a cake ball diet, I’d be on it. I’d buy stock in cake balls if they were publicly traded. If it wasn’t a terrible idea, I’d name my firstborn Cake Ball.

The secret is that the frosting is INSIDE the cake ball, mixed with the cake. I know, right?! Genius.

I tried making reindeer cake pops (à la Bakerella), but their little heads were too top-heavy and I couldn’t keep them on the pops. Maybe next time.

Peanut Butter Cup Cookies

December is here, which means it’s almost time for Christmas cookies! I’m planning on taking a whole Sunday in the next week or so and just baking  a few different kinds of cookies. I love doing some traditional Christmas cookies (sugar cookies, gingerbread people) and then experimenting with some new ones (last year I tried my hand at Linzer tarts). Still trying to finalize this year’s cookie list.

My most favorite cookies to make at Christmastime are peanut blossoms. You know, peanut butter cookies with a Hershey’s kiss pressed into the center. I’ve been making them for years and they’re always the first cookie to disappear.

This year, I decided to try something a little different: mini Reese’s peanut butter cups instead of kisses. And wow. Wow.

Wow.

These are absolutely amazing. I baked the cookies in a mini muffin tin, since the peanut butter cups are a little taller than the kisses.

Nutella Brownies

I had originally intended on making macarons this week. I bought everything I needed and set out to make them when I got home from work. I checked out some of the posts from Crystal at Windshield Diaries because she is a macaron baker extraordinaire, and…well, I guess I didn’t realize they were so intense. Even though they only consist of four ingredients, baking them perfectly is an art form. A lot of recipes call for “aged” egg yolks set out at room temperature for 24 hours. And there are dozens and dozens of troubleshooting guides. Then I saw this quote from The Times posted in Not So Humble Pie’s Macarons 101:

Even the professionals struggle with macaroons, says Meike Beck, chief home economist at the Good Housekeeping Institute. “Three seconds of overbeating and they’re ruined.” The institute spent a month making hundreds of batches of macaroons, trying to perfect a recipe. In the end it gave up. “They’re best left to the professionals. Macaroon recipes do work. But they are not consistent.” – Times Online

Sigh. Clearly I hadn’t properly prepared myself. Maybe I’ll try these…another time.

So I have the cocoa and eggs and big ‘ole jar of Nutella I was planning on using for the filling of the macarons. What to make, what to make…

I had seen a recipe for Peanut Butter and Nutella Brownies on Noble Pig a while back, but decided to tweaked it a little bit to make it extra Nutella-y.

Chocolate Cookies with Chocolate and Peanut Butter Chips

Sadly, it’s been a while since the last post. Like, 2 months. But I am back (!) and I solemnly swear I will post more regularly. No more vacations, no more reasons not to bake!

Since I’ve been short on time lately, I’ve opted for cookies. I adore baking cupcakes, but they are multi-step treats: bake cupcakes, make icing, wait for cupcakes to cool, rewhip icing because it went flat, pipe icing onto cupcakes, try again because it looks like crap, give up and use a frosting spreader.

Yea, cookies are easy.

Magnolia’s Peanut Butter Chocolate Chip Pecan Cookies

I’ve mentioned these before on the blog, and these are without a doubt the most fabulous, delicious, simple cookies. Ever. They combine the best ingredients (chocolate and peanut butter chips AND toasted pecans), and have a fantastic base that can be used with any number of other ingredients. They’re easy, they’re decadent, and they’re perfect.

When I first bought my Magnolia cookbook, this was the recipe I tried out right away and have been perfecting ever since. While they were always amazing, I recently discovered the key to making this cookie outrageous: heavy cream instead of milk. Never mind that the reason I had to use cream was because I didn’t have any milk in the house; this is the kind of serendipitous feat that doesn’t need an enlightening back story.

While the milk makes these cookies insanely smooth, the heavy cream makes them even more unbelievable.

Reese’s Cupcakes

I’m not going to say I invented these cupcakes. The combination of chocolate and peanut butter has long been replicated in baking recipes. I will, however, say I did this recipe the best I could find. These are not just chocolate cupcakes with peanut butter frosting…these are REESE’S CUPCAKES. As in, just like a Reese’s Peanut Butter Cup. As in, amazing.

You could use the Magnolia chocolate cupcake recipe (the old standby), but I instead used a devil’s food cake recipe that made for some awesomely fluffy cupcakes. Frosting is simple and completely foolproof, and I crumbled up some peanut butter cups for garnish. I suppose you could use Reese’s Pieces as well, but let’s be serious. Peanut butter cups are way better.

Am I right?

Superbowl Cupcakes

It’s been a while!  There has been a significant pause in updates for a reason though: a company trip to the Carribbean!  As we all scramble to get swimsuit-ready in just a few weeks, baking for the office has slowed significantly.  However, it’s too hard to stop baking for too long, plus there are plenty of other people in the office to bake for :)

I’m not ashamed to admit that I really don’t give a crap about football.  Never really been my thing.  For me, the best thing about football was having people over so I could cook and bake.  But the Superbowl is a different story.  It’s football, but it’s also commercials AND snacks AND beer all rolled up into one delicious evening.  I didn’t mind the Superbowl this year since I knew I’d be whipping up some kind of baked good.

I am pretty shocked that the original Magnolia cupcake recipe hasn’t turned up on this blog yet.  I beg of you, if you have never had a vanilla Magnolia cupcake, go have one.  Like, now.  No seriously.  A-maz-ing.  The fluffiest, most flavorful cupcake you can make.  Plus they’re the perfect canvas for all kinds of frosting!

Magic Cookie Bars

But they’re so good I can’t help myself.

Totally overindulged the past few days. The holidays are the worst for that. And with New Year’s Eve swiftly approaching, there is no end in sight. I’ve found it’s futile to try and resist temptation this time of year. Who wants to be crunching on carrots and cucumbers when there are delicious things abound?

Did get lots of baking gear for Christmas though, including…FROSTING TIPS!!! Be on the lookout for some professionally-piped cupcakes in your future…well, okay, they won’t be professionally piped but they will look more appetizing than the pumpkin cupcakes!

Sidenote: if anyone is looking to purchase me a gift (my birthday is in June!), I just found the most awesome baking-inspired prints at Jenny’s Bake Shop…the store also sells cupcake jewelry but they are currently sold out! ::sad trombone::

At first blush, these didn’t look to appealing to me. I’d never had Magic Cookie Bars as a kid, so I thought the combination of chocolate, coconut, and condensed milk to be pretty weird. Who knew these things were so damn amazing.

Magnolia’s Chocolate Cupcakes with Chocolate Frosting

Yes, I know, another cupcake post. But these are so damn good I couldn’t resist. Plus, the recipe comes from my muse and baking inspiration Allysa Torey, owner of Magnolia Bakery in NYC. I bought Allysa’s cookbook a few years back, and her recipes are truly the only ones I’ve found to be infallible. Her cupcakes…wow. If you’ve been to Magnolia you know her cupcake and buttercream frosting combo are pretty killer, and they are super easy to make.

So many of the baking tips and tricks I’ve picked up have come from her (second only to my mom). A couple of my favorites:

  • Make sure all cold ingredients (butter, milk, eggs) are at room temperature before you start mixing. This has been possibly the best tip I’ve ever received; it really makes a difference!
  • You simply cannot overbeat sugar and butter, so feel free to whip away until they are super fluffy. Once you add any other ingredients in, though, be careful. Always cream the butter and sugar before you mix in anything else.

These are pretty simple, just chocolate cupcakes with the famous Magnolia chocolate “buttercream” (I put buttercream in quotes because even Allysa notes that it’s not made like a traditional buttercream). Since my last attempt at piping icing was a disaster, I think I’m getting a little better, no?
